Banana Nut Bread

Description

I’ve loved banana bread all my life, but honestly don’t make it very often. It’s so lovely served warm with butter! It makes a tasty companion to morning coffee.


Ingredients

  • 1 cup sugar
  • 2 tbs unsalted butter (room temp)
  • 1 large egg
  • 3 tsps buttermilk
  • 1 tsp baking soda
  • 1 tsp ground nutmeg
  • 1/2 cup vegetable oil
  • 2 cups flour
  • 1/2 cup walnut pieces
  • 1 cup mashed very ripe bananas (this is generally 23 bananas)

Instructions

Preheat oven to 350 degrees. Lightly grease a 5×9 loaf pan and set aside.

  • In a large bowl whisk together sugar, butter, egg, buttermilk, baking soda, nutmeg, and oil.
  • Fold/stir in sifted flour
  • stir in bananas and walnuts

Pour into loaf pan and bake for 1 hour. Test for doneness with a butterknife inserted into the center (done when comes out clean). When done, remove from pan and cool on a rack.
